At Mason Farming we grow organic carrots in two different sizes (micro and baby) and in 4 different colours (orange, white, purple and gold).

There are many great benefits to eating carrots and its leaves.

Carrots are a particularly good source of beta carotene (an antioxidant), fibre (pectin is the main form of soluble fibre in carrots which can lower blood sugar levels by slowing down your digestion of sugar and starch), vitamin K1 (important for blood coagulation and bone health), vitamin B6 and potassium. The orange carrots get their vibrant colour from beta carotene which our bodies convert to vitamin A. Carrots are mostly made up of water and the chewy bits consist of about 10% to 15% carbohydrates.

They have been linked to lower cholesterol levels and improved eye health. They are also rated a low-glycemic food which is excellent for people that are diabetic.

Don’t throw the leaves away. Chewing on carrot leaves can heal sores in the mouth and detoxify and strengthen your kidneys. Enjoy it raw in salads, blanch them, add it to your soup or sauté them with olive oil, garlic and any other green vegetables.
